RAINBOW ENZYME SALAD (Summer Detox Guide)
Ingredients:
1 cup grated carrot
1 handful radish or daikon sprouts 1 handful arugula
1 handful watercress
2 tbsp chopped fresh mint
Dressing:
4 tbsp lemon juice
2 tbsp coconut aminos
Pinch sea salt + black pepper
Instructions:
Toss all vegetables. Whisk dressing and drizzle over. Serve immediately. Enjoy alone for lunch, or pair with your favorite cooked dinner to optimize digestion.
